Coconut oil is pressed from the meat of matured coconuts which are harvested from the coconut palm. The oil is used as a pure food, food ingredient and in medicine. It is high in saturated fat (medium chain triglycerides) content, and as such is very stable with a long self-life.

Coconut oil, as the most readily available source of medium chain fatty acids, is an excellent energy source. It increases the metabolic rate and reduces the amount of fat stored, thanks to its convertibility to ketones.

Our virgin coconut oil is gently processed to remove and clean the meat from the shell. We then pass the meat through a slow extractor to release the liquids (water and lipids). These liquids are then processed in a centrifugal separator which removes the fats from the water and then we slowly filter the oil to remove any remaining residues. This process involves low heat and produces the finest, clearest, raw and most nutritious oil available.

Description

Coconut oil is a fat consisting of approximately 90% saturated fat,  predominantly medium chain triglycerides/fatty acids (MCFA’s). Of these saturated fatty acids, coconut oil is primarily 44.6% lauric acid, 16.8% myristic acid , 8.2% palmitic acid and 8% caprylic acid.

Unrefined coconut oil melts at 24-25°C and smokes at 177°C , while refined coconut oil has a higher smoke point of 232°C.

Among the most stable of all oils, coconut oil is slow to oxidize and thus resistant to rancidity, lasting up to two years due to its high saturated fat content. In order to extend shelf life, it is best stored in solid form, which is below temperatures of 24°C.

Virgin coconut oil is derived from fresh coconuts, rather than dried. When coconut meat is dried, it is called copra. All refined Coconut oil is obtained from this copra and thus not virgin.

Most oils marketed as “virgin” are produced in one of three ways:

  • Quick-drying of fresh coconut meat, which is then used to press out the oil.
  • Wet-milling (coconut milk). With this method, the oil is extracted from fresh coconut meat without drying first. “Coconut milk” is expressed first by pressing. The oil is then further separated from the water. Methods which can be used to separate the oil from the water include boiling, fermentation, refrigeration, enzymes and mechanical centrifuge.
  • Wet-milling (Direct Micro Expelling). In this process, fresh coconut kernel is shredded and dried to about 10% to 12% moisture. The moist shredded coconut is then pressed to expel virgin coconut oil.
